We had chicken tacos this week instead of beef. They were so good! Here's the fantastic, VERY easy crockpot recipe we used.
1 pound chicken breasts
1 cup chicken broth
1 package taco seasoning
Cook 6-8 hours (though it only took about 4-5 hours for us). About an hour before it's done, stir it around so that the chicken breaks up into shreds.
Simple and yummy! For those of you who don't have to make taco shells and have the convenience of buying them at the store, total dinner prep time...maybe 15 minutes...

About the seasoning mixes -- Jenn Unsell told us about a website called budget101.com which has, among other things, seasoning mix recipes. In case you run out of packets and the site is blocked -- here's the taco seasoning mix recipe:
3/4 dried minced onion
1/4 cup salt
1/4 cup chili powder
1 tbsp dried oregano
2 tbsp cornstarch
2 tbsp crushed dried red pepper
2 tbsp dried minced garlic
2 tbsp ground cumin
Mix and keep in a ziploc back.
Mix 2 tbsp mix, 1/2 cup water, 1 pound meat and simmer together till heated through.
Of course, I don't know if you can get all those spices either ... Oh, well!
